The Confectional takes cheesecake into a new flavor dimension! They offer over 12 unique cheesecake flavors in individual portions. This means cheesecake loving customers can mix and match cheesecake flavor bombs, from Raspberry White Chocolate to Seattle's New York Style. Cheesecakes are all-natural, made by hand and finished with their buttery crunchy thick crusts and topped with a signature sweet sour cream.  They also make Dips, an even smaller cheesecake dipped in chocolate, as well as other whimsical chocolate creations.

 Paul Verano founded The Confectional in New Zealand in the early 2000's, where he enjoyed great success while baking cheesecake out of a rented kitchen at night, with clients like Peter Jackson (yes, THE Peter Jackson) and the mayor of Wellington! After moving back to the states, Paul was excited to start baking his cheesecake sensations in the city he loves, Seattle. He applied for a coveted spot in the heart of Pike Place Market and quickly teamed up with his best friend and marketing professional Destiny Sund, with whom he shared a 22-year bond over their mutual passion for dessert and deprived, sugarless childhoods. Paul and Destiny opened to the public in December 2006 in Pike Place Market and their 2nd boutique on vibrant Capitol Hill on June 4, 2011.
